“Fermented in a small, stainless fermenter with 5% whole bunches before being basket pressed to a mix of new and old French oak barriques for nine months of maturation. A light to medium, bright ruby red. A bright, ‘cool’ nose featuring freshly picked red cherries, spice and some Italian bitters and orange amaro scents. Driven as much by the wine’s bright acidity as its silky tannins, this appealing min-weight wine can be enjoyed now and over the next four to six years.

WINE MAKING NOTES
Fermented in a concrete fermenter with 5% whole bunches, 95% destemmed fruit. Daily pump over through 12 days of fermentation, basket pressed to a mix of new and old French oak barriques for 9 months of maturation. Blended to a stainless-steel tank for 1 month of settling prior to bottling; no additions besides a small amount of Sulphur Dioxide post Malolactic fermentation and another small dose at bottling.
